In the spirit of the Season, I have dusted off my old cookbook (actually my mother's old cook book) and am doing a trial run on making home baked bread rolls. The dough looks OK so far, but it is taking it's time about rising. We do keep it rather cool in the house, which is always an issue with yeast. I warmed up the oven and put the bowl inside to see if that will give it a nudge. Well, this is why I'm doing a trial run. Wouldn't want flat bread rolls on Thanksgiving. It's been more than a few years since I baked. My Grandfather had his own bakery in Detroit which inspired me to take a bread baking evening class at a local VoTech school in New Jersey. Had a lot of fun with it and went though a time baking a lot of bread at home. I was working at home at the time, so that worked out well. Fast forward a few years and the old cookbooks are a bit dusty. Wish me well please .
This is our first Thanksgiving home in a couple of years. We have neighbors coming over with everyone bringing their family specialty. It should be a fun afternoon. I just found out our gas fireplace won't light. I called for service, but they are 2-3 weeks out. Bummer. At least we will be up and running for Christmas.

2 Hour Birding Excursion - Birdwatching at Okefenokee Adventures!
Venture out into Okefenokee National Wildlife Refuge on one of our 24 ft. Carolina Skiffs with an experienced Naturalist as you look for birds and learn birdwatching skills. Please bring binoculars if you have them (we may be able to provide binoculars but quantities are limited). These flat bottomed boats have canopies, bench seating with backs, and are comfortable, stable and safe!
You will travel along the historic Suwannee Canal through a tangled forest of bay, cypress, pine and shrubs, then out into the open expanse of Chesser Prairie. As you search for the birds that call the Okefenokee home, you will learn bird identification skills. The bird species present in the swamp vary depending on the season. Birds that may be encountered are herons, egrets, red-shouldered hawks, ibises, and various blackbird species. If we are lucky we may also see birds like swallow-tailed kites, sandhill cranes, and barred owls.

St. Marys White Lighting Procession
St. Marys Annual White Lighting Processional Parade is a free fun night for all. During this delightful holiday event you'll be entertained by carolers and dancers.
The parade begins at 5:30pm, or just after dusk, at Meeting Street and helps kick off the holiday season. The public is encouraged to join the procession from Meeting Street up Osborne Street as Santa and Mrs. Claus lead the way toward the waterfront.
Santa will light the giant St. Marys Christmas Tree and then take time to sit with the kids at the St. Marys Waterfront Pavilion, behind the Christmas Tree.
